Tasty Tuesday: Easy Banana Bread

I love a quick, easy and healthy breakfast bread. I feel like I always have brown bananas and even though I pop most of them in the freezer for smoothies later, I can't do that all the time because I seriously have a freezer full of bananas! 

So, when my in-laws were coming up for E's party, I thought that I'd make a banana bread so we would have something for breakfast!

I love this recipe because it doesn't have a ton of ingredients and it's easy. This is not the only banana bread recipe I use, but I do really like this one. I also like using apple sauce because it makes it healthier (and more moist) and I have a pantry full of applesauce because E won't eat it.


Preheat oven to 350
Mix flour, baking soda, and cinnamon in a large bowl
Mix brown sugar and applesauce until completely blended
Add 2 eggs, vanilla, and bananas to the sugar and mix well
Add wet ingredients into the dry and fold until all ingredients are wet
Pour into a greased 9X5 bread pan
Bake on 350 for 60-70 minutes or until toothpick inserted in the center comes out clean

Ingredients
2 cups all purpose flour
½ cup applesauce
4 large ripe to overripe mashed bananas
2 eggs
¾ cup brown sugar
1 tsp baking soda
1 tsp vanilla
½ tsp cinnamon
½ tsp salt

Instructions
Preheat oven to 350

Bake on 350 for 60-70 minutes (Mine baked for about 45 minutes) or until toothpick inserted in the center comes out clean.
