Menu Monday: Red Velvet Whoopie Pies

One of my favorite go-to sites for yummy food is Mix and Match Mama (also known as Sean Lowe from the Bachelor's sister). I needed a quick and easy dessert for kiddos and adults alike, so I found this delicious recipe. They are super simple...the longest part is waiting on them to cool before you put the frosting in the center. I'm sure you could make a much more homemade version of these (homemade frosting would be delicious).

Needless to say, the kids loved them and I may have finished off the leftovers (I swear that's why I run...I should weigh 300 lbs).


Shopping List
1 box red velvet cake mix
1/2 cup veggie oil
2 eggs
1/4 cup water
store bought cream cheese frosting
1/2 cup mini chocolate chips

Preheat oven to 350 degrees

Combine cake mix, oil, eggs, and water in bowl. 

Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)

Bake 9-10 minutes

Cool on pan 5 minutes, move to wire rack and cool 15 more minutes

Pour frosting into a bowl.  Add in chocolate chips and stir until chips are evenly distributed in frosting.

Take one cookie and place a tablespoon or so of frosting in the center.  Press another cookie on top (this will spread the icing out to the edge).

Yum!
